VACANCY/JOB: OF EXECUTIVE CHEF
Mazsons Hotel is looking for a highly motivated and capable Executive Chef /Sous chef/Chef with a real passion for preparing popular, healthily and nutritional meals. A quick learner who can fit into an established environment and be able to train junior staff to achieve their best when preparing meals.
QUALIFICATION:
The candidate should be a holder of Diploma in Food and Beverage production/Culinary and catering Management.
Working experience five years or above as an Executive Chef or Assistant Head Chef in a tourist class hotel/ Restaurant.
High level of competence and honesty of work
High level of integrity and ability to work professionally and independently
Good knowledge in supervision, food costing, controls, stock taking and food nutritional values
Ability to plan, budget, achieve result and meet deadlines.
DUTIES AND RESPONSIBILITIES
• Planning, coordinating, Organizing and managing all affairs in the. kitchen for the development of the hotel.
• Ensuring hygiene and cleanness level are maintained in the kitchen.
• To control food cost and food quality
• To compile the menus and food costing
• To maintain the high discipline in the kitchen, prepare duty roster and provide training to the kitchen staff
• Controlling stock rotation to ensure the kitchen and stores are always well stocked
• Constantly checking the quality of the food being served to the customer
• Fully conversant with various cooking methods
• Experiencing of a high volume catering in a busy place
• Ensuring the security of movable and immovable assets and stock of the kitchen
• Undertaking any other related duties assigned by the Management
